Cream cheese and chocolate cream cake

Chocolate sponge cake




5 eggs / 5 bii telur 
125 g caster sugar / 125 g gula caster
 125 g flour / 125 g tepung 
15 g ovelette / 15 g ovelette 
1 tbsp baking powder / 1 sdb baking powder
 40 ml water / 40 ml air 
70 g melted butter / 70 g mentega cair 
1 tsp vanilla essence / 1 sdt esen vanilla 

Heat up oven at 180 C / Panaskan ketuhar pada 180 C Whisk all ingredients except melted butter till light and fluffy. Batter should be thick / Pukul semua bahan kecuali mentega cair sehingga putih dan gebu. Add in melted butter and vanilla / Masukkan mentega cair dan esen vanilla ·     For the same recipe you can used for chocolate sponge cake. Reduce flour to 100 plus 20 g cocoa powder  / Untuk mendapatkan kek sponge koko kurangkan tepung kepada 100 dan tambahkan 20 g serbuk koko

Cream cheese cream


coklat mousse
200g coklat - dipotong kecil
15-20g gula kastor - ikut citarasa
1 biji telur kuning
40ml susu segar
1 1/2 sudu kecil gelatin + 2 sudu besar air - dicairkan
160ml non-diary whipping cream - ABM guna yg dh manis
*jika guna whipping cream yg tawar, tambah jumlah gula ikut citarasa*

1. Cairkan coklat menggunakan kaedah double boiler.
2. Masukkan telur kuning, gula, susu kedalam mangkuk lain dan pukul seketika. Letakkan mangkuk diatas air panas (double boiler) dan pukul sehingga gebu.
3. Masukkan campuran telur kedalam coklat dan kaup balik. Masukkan juga gelatin yang sudah dicairkan dan gaul rata.
4. Pukul whipping cream sehingga kental. Masukkan kedalam campuran coklat dan kaup balik sebati.


Chocolate mousse


50g UHT whipping cream


50g milk
1 egg yolk (A size), lightly stir well
150g chocolate
150g UHT whipping cream 

Method

Beat 150g whipping cream till stiff (over a bowl of iced water), keep in the fridge before use.
Mix whipping cream and milk in a saucepan, cook it till hot.
Remove saucepan and wait slightly warm, add in egg yolk, stir to mix well.
Return saucepan to heat, stir to mix well.
Melt chocolate over simmering water till melted. Add chocolate into milk mixture, cook over low heat till thicken.
Wait till chocolate mixture cool down, mix in the whipped cream, stir to combine.

Dorayaki with Chocolate custard filling

Chocolate custard cream

2 tbsp cocoa powder
2 tbsp corn flour
1 cup milk
5-6 tbsp sugar
salt
1 egg yolk
1 tbsp chocolate

dorayaki
1 egg white
2 eggs
100 g low protein flour
1 tbsp honey
55 g sugar
salt
3 tbsp milk
1 tbsp oil
